This is a slight twist on the very popular Australian Lamington Cake. A light vanilla sponge, topped with a chocolate fondant icing, liberally covered in desiccated coconut. So what is the twist? Hiding under the icing is a good helping of raspberry jam and vanilla butter cream.  Delicious!

Ingredients

From the 27th October 2025 we are using a different flour.  Calcium Carbonate has been replaced with Calcium and there is now Folic Acid present.

Care Instructions
