Proving that not all cookies need chocolate this little beauty is packed with Ginger in many forms, ground, stem and crystalised!  Two mini Ginger Cookies sandwiched together with vanilla buttercream.

Ingredients

Cookie:
Self Raising Flour – Wheat Flour (WHEAT Flour, Calcium Carbonate, Iron, Vitamin B3 – Niacin, Vitamin B1 – Thiamin, Raising Agents: Mono Calcium Phosphate, Sodium Bicarbonate), Light Brown Sugar – Cane Sugar, Butter (Salted)MILK, Salt, EggEGGCrystalised Stem Ginger – Stem Ginger, Sugar, Preservative SULPHUR DIOXIDE, Stem Ginger – Stem Ginger, Sugar, Water, Acidity Regulator: Citric Acid  Ground Ginger – Ginger, Baking Powder – Raising Agents (E450 (Diphosphates), E500 (Sodium Carbonates), Starch, Vanilla Extract – Invert Sugar Syrup, Glucose Syrup, Water, Vanilla Extract, Bicarbonate of Soda – Raising Agent (E500 (Sodium Carbonates)).
Buttercream:
Icing Sugar – Icing Sugar (97%), Maize Starch, ButterMILK, Plain Flour (Heat treated) – Wheat Flour (WHEAT Flour, Calcium Carbonate, Iron, Vitamin V3 – Niacin, Vitamin B1 – Thiamin),  Water – Water, Vanilla Extract – Invert Sugar Syrup, Glucose Syrup, Water, Vanilla Extract.

Made in an environment that handles, Cereals containing Gluten, Celery, Egg, Milk, Mustard, Nuts, Oats, Peanuts, Sesame, Soya and Sulphites.

We use grated ginger in syrup in this product. This sometimes results in ginger fibres that a look a little like small hairs in the cookies. They are an entirely natural product and nothing to be concerned about!

From the 17th February 2025 we are using a different flour.  The previous product contained – Self Raising Flour – Wheat Flour (WHEAT Flour, Calcium, Iron, Vitamin B3, Vitamin B1, Raising Agents: Sodium Hydrogen Carbonate: Mono Calcium Phosphate),

From 11th April 2025 our Stem Ginger contains Acidity Regulator: Citric Acid.
